Try This Delicious and Simple Recipe on Your Next Camping Trip
I don’t know about you, but we have camping and fishing on the brain. It is past due time to get outdoors and enjoy the fruits of nature and the joy of fishing! On your next outing, make this delicious and simple recipe to share a meal that highlights the day’s catch. Blackened Firecracker Catfish is easy to prepare and all you need is your fresh catfish, a pan, and a few simple ingredients.
Blackened Firecracker Catfish Ingredients:
- Two or more catfish fillets (you can also use perch or snapper for this recipe)
- Tsp cayenne pepper
- Tsp salt
- 1/2 tsp oregano
- 1/2 tsp sugar
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp dry dill weed
- 1/4 tsp fresh cracked black pepper
- 1/2 cup unsalted butter (melted)
- Lemon juice to taste
Utensils: cast iron or stainless steel pan, fish spatula or another thin spatula, basting brush
Directions: Mix all of your dry ingredients in a bowl and set them aside. In your skillet heat butter on high flame until butter is melted, reserving some melted butter on the side. Baste both sides of each fillet in butter and then coat each fillet with your dry spice mixture. Gently place your fillets into your hot skillet no more than two at a time as not to crowd your skillet. Cook for 4-5 minutes on each side flipping only once for each side. Remove from the skillet and serve, adding lemon juice to taste.
Chef’s tips: Before you coat your fish be sure to pat each fillet as dry as possible. Moisture is what causes fish to stick to your skillet. The addition of salt and pepper in the recipe also will help keep fish from sticking to the pan.
